100 g parsnip
10 g fresh ginger

1 jar of SAMSØ SYLTEFABRIKs græskar (pumpkin)
A few drops of cider vinegar
Easy pumpkin soup from pickled pumpkins
PREPARATION TIME: 30 MIN.
Chop parsnip, ginger, shallot and garlic. Sauté vegetables in rape oil in a pot. Add drained, pickled pumpkins. Cover vegetables with water and cook until tender. Then blend vegetables to desired consistency. Add a little water if necessary. Season with salt and a little cider vinegar to prevent the soup from becoming too sweet.
