2 chicken breasts with skin
1 tablespoon butter
2 tablespoons rape oil
2 tablespoons sugar
2 tablespoons household vinegar
2 tablespoons water
1 jar Samsø potatoes
1 glas SAMSØ SYLTEFABRIKs DRUEAGURKER (gherkin)
1 glas SAMSØ SYLTEFABRIKs AGURKESALAT (cucumber salad)
Chicken with pickled stuff
PREPARATION TIME: 1 HOUR 30 MIN.
Fry the chicken breasts in rape oil and butter on a hot plate until the skin is golden. Season with salt and pepper. The chicken breasts are finished in the oven at 80°c until the core temperature reaches 75°C (about 1 hour). Check for core temperature using a meat thermometer.
Mix the pickle with sugar, household vinegar and water. Season with pepper and salt. Peel the squash lengthwise using a thin peeler (if the squash has a bitter taste, discard it). Pour the pickle juice over the squash and put it in the fridge an hour before serving.
Cut aubergines into 1 cm slices. Put them in a dish and add a bit of rape oil, salt and pepper. Place in fridge for about an hour. Heat up grill pan well. Drip off the aubergine slices well before placing them on the grill pan and fry them until tender.
Drain and rinse the SAMSØ potatoes before warming them in a pot with a little water.
Serve the chicken breasts with the warm Samsø potatoes, grilled aubergines and raw-picked squash and SAMSØ SYLTEFABRIKs DRUEAGURKER AGURKESALAT (gherkins and cucumber salad).
